I’ve mentioned before that my husband and I put out an email blast every Friday called the Friday Fish Report for our Seafood Market- you can sign up on our homepage if you want to get a new seafood/fish recipe each week. Today was about these Vietnamese shrimp summer rolls and how difficult they were to make at first! Not until he realized he was over stuffing the rolls and that’s why they weren’t turning out at all, was he able to make a beautiful wrap! Because his first attempt was disastrous we decided all the ingredients would make a delicious lettuce wrap or even just a salad, hence the 2nd photo.

It’s a perfect, portable, healthy meal that you can hold in your hand! I love the chili lime dipping sauce:)And here’s the recipe.

soft shell crabs!

Soft shell crabs are in season and are one of my very favorite seafoods! What could be better than to take one of the world’s most delicious crabs (blue crabs) and be able to enjoy not just the sweet chunky meat but also the entire crab right down to the crispy claws, legs, and paddle fins. Yes, that’s right, you eat the WHOLE crab! Of course that’s after your fishmonger has cleaned them for you. See the video here of my husband cleaning one.

The classic way to prepare them is to pan fry but grilled are also delicious and easy! Eat them with a dipping sauce of your choice- my favorite is cocktail sauce.

cinco de mayo ~ detroit, mi

¡Feliz Cinco de Mayo! My husband and I like to get down to Detroit’s Mexican town whenever possible. Located in southwestern Detroit, it is a vibrant and thriving neighborhood. Two years ago we were there for the celebration and we’re heading there today to participate in the festivities that include mariachi music in the street, dancing, good food, cerveza, margaritas…and more cerveza!

So celebrate and remember what Cinco de Mayo should really mean to us non-Hispanics is to have a day to commemorate the colorful, festive, fun, and rich culture that our Mexican neighbors share with us.

Tomorrow is Cinco de Mayo and what better way to celebrate than with some shrimp quesadillas! These were easy to prepare and very tasty. Mix up a batch of some killer margaritas and you’ve got yourself a fiesta!

isla holbox, mexico

In March, my husband and I travelled to Isla Holbox, an island in the Yucatán Peninsula. What a beautiful, peaceful place! It has not yet been overtaken by too many tourists, no hi-rise hotels or Señor Frogs here! The people are so friendly! There’s not a whole lot to do but relax and who doesn’t like that? All the streets are soft sand, no real need for shoes! Many people go to work in bare feet. Golf carts are the vehicle of choice- the island isn’t that big. The only cars we saw were police cars, all the taxis are golf carts. You can pretty much walk everywhere but it is a good idea to rent a cart and explore all the island. That became our afternoon ritual- rent a cart, buzz down to the hotel with the best margaritas (ask for them “para llevar”, meaning to go), and head off to find a great spot to watch the sunset:)

Let’s hope this gem of an island remains tranquillo for many years to come!
